Loaded Mashed Potatoes
INGREDIENTS:
Potatoes:
- 4 pounds potatoes mashed
- 1/3 cup cannabutter (see #41cblog for recipe)
- 1 cup milk
- 1 cup sour cream
Topping:
- 8 strips of bacon cooked and crumbled
- 2 cups of shredded cheddar cheese divided
- 1/4 cup of chives chopped
- 1 tsp. salt
- 1 tsp. pepper
- Sprinkle of parsley
INSTRUCTIONS:
- Cook, drain, and mash the potatoes.
- Add the butter and milk while mashing.
- Next, add the sour cream, 1 cup of shredded cheddar cheese, salt, and pepper and mix.
- Spread the mashed potatoes into a 9″ x 13″ baking dish.
- Top with the remainder of the shredded cheese.
- Cover with tin foil and bake for 25 minutes.
- Top with the bacon, chives, and parsley.
